La Madeline's tomato Basil soup
Today for lunch I tried a new recipe. It I'd a knock off of La Madeline's tomato basil soup.and it was pretty good! Especially with some homemade butter bread for dipping! The only thing I will try for next time is more salt, and simmer a little longer at the end. ( I kind of rushed it because I was starving!)
Tomato basil soup
2 large cans of crushed tomatoes
12 fesh basil leaves
1 cup heavy cream
1 stick of butter
Kosher salt & pepper to taste
Simmer tomatoes in a pot for about 30 minutes on low. Purée with
basil leaves until mostly blended. Return to pot, add cream,
butter, salt and pepper. Stir off and on over low heat foe about
5 to 10 minutes. Garnish with fresh basil and enjoy with fresh bread for dipping!
